Sugar Cookie Truffles
Next in our line-up of homemade truffles is the delicious sugar cookie truffle! This is basically the same method as the Oreo truffles, only catered more for those crazy "non-chocolate" lovers out there. (Do those people REALLY exist?!) No matter who you are, you will love these. They're simple and delicious!
Sugar Cookie Truffles
Recipe adapted from Cookies and Cups, originally from Nestle
1 16-oz package pre-made sugar cookie dough
3 oz reduced fat cream cheese, room temperature
1 cup (half a bag) white chocolate chips
Sprinkles for decorating
Following the instructions on your cookie dough packaging, bake the sugar cookies until they are CRISP, but not burnt. (I baked mine just a few minutes longer than stated. Cool cookies completely.
Using a food processor, crush the cookies to a fine crumb. Pour the crumbs into a bowl and combine with the cream cheese until the mixture forms a dough-like consistency. Roll the dough into 1-inch balls and refrigerate for 10-20 minutes.
In a microwave-safe bowl, melt the white chocolate chips 20 seconds at a time at 50% power, stirring with a spatula between each session, until just melted. Remove the cookie balls from the fridge, dip into the melted chocolate, and garnish with sprinkles. Let sit until the chocolate has hardened and store in a sealed container in the refrigerator.
